2 lb (1 Kg) fresh calamari (squid), prepared and sliced
2 cups (500 mL) bread crumbs
Choice of lettuce leaves
Freshly ground pepper, to taste
1/2 cup (125 mL) melted butter
1/3 cup (80 mL) lime juice
1/4 tsp (1 mL) garlic powder
1/4 tsp (1 mL) ground white pepper
In large bowl or glass dish, combine calamari and Mediterranean Sauce. Mix well. Marinate for 2 to 3 hours in refrigerator. Place bread crumbs in large bowl. Lightly dip each calamari piece in bread crumbs and place on platter.
In large skillet, heat some butter. When it is hot, sauté calamari on all sides for a total of 10 minutes. Drain calamari on paper towels. Cover bottom of large platter with lettuce leaves. Place calamari on lettuce. Pepper to taste and serve with lime quarters and tzatziki sauce.
